Big D's BBQ is modeled after "True" Santa Maria Style BBQ. The history of Santa Maria BBQ goes back to the early 1800's in the Santa Maria Valley on the Central Coast of California when the first American cowboys known as "Vaqueros" would host large cookouts after each cattle roundup for their friends, family, and fellow ranchers. The menu and methodology remain very similar to the early days. The meat is cooked over a hot Red Oak fire, built from wood of the Red Oak Tree which is found on the Central Coast. The Piquito beans which are only Grown in the Central Coast of California. Don't be fooled by imitators, if the above methods are not followed, it is not "True" Santa Maria Style BBQ. There is something to be said about tradition and simplicity, as you will discover with your first delectable bite.
